Chinese sausages

People in Yichang are busy making Chinese sausages ahead of the Spring Festival. Chinese people – especially in southern China – like to prepare homemade sausages to celebrate the Chinese New Year.
 

There are different flavors in different parts of China, but most can be roughly divided into two types – sweet Cantonese style sausages, or spicy Sichuan style sausages.
 

To make Chinese sausages, people mince the meat and marinate it in seasoning. The ground meat is then inserted into the long sausage casing and sectioned off with cotton thread. The next step is a week of either drying the sausages in a well-ventilated, shady area or smoking them. Then it’s time to eat. Cut off as much as you fancy, and boil, steam, or fry them as you prefer!
