Jiaodong Tofu skin has a 200-year history and long-standing reputation in Jiaodong Village, Dangyang City of Yichang. During the boiling of soy milk, a film composed primarily of a soy protein-lipid complex forms on the liquid’s surface. This film is collected and dried into yellowish sheets, known as tofu skin. Fresh, fermented, or dried, it is widely used in Chinese cuisine. In March 2022, the production technique of Jiaodong tofu skin was listed in the seventh batch of municipal intangible cultural heritages as a representative project in Yichang City.
