In Zigui County, liquor makers are currently occupied with producing "Banzengzi" baijiu, a traditional spirit with a brewing technique that dates back to the middle or late Qing Dynasty (1644-1911). "Banzengzi" literally translates to "moving the wooden barrel around". This liquor is crafted from grains like corn, sorghum, and buckwheat, without the addition of any additives. Despite its low yield, it boasts a delightful aroma and a flavorful taste.
