Fried eggs with toon sprouts

It's time for another popular dish - toon sprouts (xiang chun) – which you might find on menus across Yichang in the springtime. Most people living on the banks of the Yangtze River love eating toon sprouts during this season, however, opinions are somewhat divided outside of the region, as some are put off by its pungent durian smell. One of the most popular dishes featuring toon sprouts is an omelet!
