As the New Year approaches, families in Yichang begin to prepare all kinds of dishes, including fish cakes.

A fish cake, also known as a "meat cake" in folklore, is the primary dish in Yichang for entertaining honored guests, festivals, weddings and birthday banquets.

Steps to make fish cakes: first remove the fish bones and chop the meat into a mince. Mix with green onion, ginger, pork fat and egg white, and brush with an egg yolk liquid. Finally, add the fish cakes to a pot and steam until cooked.
