Trotter hot pot

“Trotter hot pot” - made with preserved pig’s feet - is a local delicacy in Yichang. Trotters and potatoes are the main ingredients, but various other vegetables - such as mushrooms, chilies, and tofu - can be added to the pot.
Blanch the trotters for 10 minutes in boiling water, then rinse them and cut them into bite-sized pieces. Add oil to the pot on low heat. Throw in some ginger and scallions for extra flavor. Now turn the heat to high and stir-fry the pork trotters briskly for 2 minutes. Then add water, making sure it covers the trotters, and cook on high heat for 30 minutes. After that, add the potatoes, turn the heat down and simmer for an hour. You can use a pressure cooker in this recipe to reduce the cooking time.
Preserved trotter hot pot is a dish full of flavor. It doesn’t taste greasy at all, and rice is the perfect accompaniment.
